Tempering gives chocolate its gloss, snap, and smooth texture by melting, cooling, and reheating to stabilise the cocoa butter crystals. Gami chocolate tempering machines make this process simple and consistent with precise temperature control and reliable performance for artisan and small-batch makers. 

The bain-marie heating system avoids burning the product, while the removable auger allows quick cleaning and easy changeovers between dark, milk, or white chocolate. 

Once tempered, the chocolate can be dosed into moulds or used with enrobing equipment to coat a range of confectionery products. 

Bakers and confectioners who work with coatings such as compound chocolate or icing can achieve the same smooth finish using Gami’s enrobing systems, without the need for tempering.
